Spinach Scrambled Eggs

Preparation time - 5 minutes
Cooking time - 10 minutes
Serves - 8

Ingredients

Butter 60g English spinach (1 bunch) 160g Slices Pancetta 16 Eggs, lightly beaten 16 Cream (1 cup) 250ml Slices crusty bread 8 MASTERFOODS salt & pepper, freshly ground to taste MASTERFOODS Barbecue Sauce MASTERFOODS Barbecue Sauce (Squeezy sauce)

Method

  1. Heat butter in a large non-stick frying pan. Add spinach, cook until spinach wilts.
  2. Remove from oil & drain on absorbent paper. Cover to keep warm.
  3. Combine eggs & cream in a bowl and whisk until combined. Season well with MASTERFOODS salt & pepper.
  4. Grill pancetta until crisp. Cover to keep warm.
  5. Heat the remaining butter in a pan and add egg mixture. Cook over a low heat, stirring gently with a spatula until creamy and almost set.
  6. Toast bread. Top toast with pancetta, scrambled eggs then spinach and MASTERFOODS Barbecue Sauce.
