Warm Potato Salad

Preparation time - 10 minutes
Cooking time - 20 minutes
Serves - 4-6

Ingredients

Waxy Potatoes, peeled and roughly halved 600g Olive Oil 1 tablespoon Middle rasher bacon, cut into large squares 125g Spanish Onion, thinly sliced 1/2 MasterFoods Fresh Garlic, finely crushed 1 teaspoon MasterFoods Whole Egg Mayonnaise 3 tablespoons MasterFoods Chopped Dill Tips 1 teaspoon MasterFoods Sea Salt to taste MasterFoods Cracked Pepper to tast

Method

  1. Peel and roughly chop potatoes; place into boiling water to cook.
  2. While potatoes are cooking cut bacon and Spanish onion.
  3. Sweat bacon in a hot pan with olive oil until crisp and golden.
  4. Once bacon is cooked, turn off heat and add one teaspoon of MasterFoods finely crushed garlic. Stir through.
  5. Into the partly cooled pan add the onion and leave to warm through.
  6. Once the potatoes are tender, drain and return to pot.
  7. Stir through the bacon and onion mix.
  8. Add MasterFoods Dill, Salt and Pepper.
  9. Carefully stir through MasterFoods Whole Egg Mayonnaise until the salad is mixed.
  10. Serve warm.
