Indian Spiced Chicken Salad

Preparation 20 mins Cooking 15 mins Serves 2


  • 2 Tablespoons MasterFoods® Curry Powder
  • 2 Teaspoon MasterFoods Freshly Chopped Ginger
  • 1½ Teaspoons MasterFoods Freshly Chopped Garlic
  • 2 Spanish onions chopped
  • ¼ Cup freshly chopped coriander
  • ¼ Cup freshly chopped mint
  • 1 Tablespoon grated lemon rind
  • 3 Tablespoon lemon juice
  • 1/3 Cup extra virgin olive oil
  • 3 Chicken Breasts (600g)
  • 200g green  beans, blanched
  • Fresh Rocket
  • Bunch watercress trimmed
  • 1 qty fresh yogurt & herb dressing 


  • ½ cup freshly chopped mint
  • 1/3 cup freshly chopped coriander
  • 2 tablespoons lemon juice
  • 1 teaspoon MasterFoods Freshly Chopped Garlic
  • MasterFoods Sea Salt and Black Pepper Cracked, to taste

Cooking Instructions

  1. Combine MasterFoods® Curry Powder, MasterFoods Freshly Chopped Ginger, MasterFoods Freshly Chopped Garlic, onions, fresh herbs, lemon rind & juice and olive oil into blender.  Blend until smooth
  2. Pour over Chicken breasts, cover & marinade overnight or for several hours
  3. Remove. Heat pan over a high heat, sear chicken on both sides until golden brown
  4. Reduce heat & cook until tender, thinly slice.
  5. Toss with, beans, tomatoes, rocket and watercress
  6. Blend Yoghurt & herb dressing ingredients together, and drizzle over meal.
