Pears with Chilli Chocolate Sauce

Preparation 15 mins Cooking 1 1/2 hours Serves 8



  • 6-8 pears (slightly under ripe)
  • 1 cup sugar
  • Peel of one orange cut into strips
  • ¼ cup orange liqueur
  • 1 cup sweet sherry
  • ¼ cup brandy

Chilli Chocolate Sauce

  • 200g Chocolate, roughly chopped
  • ½ cup water
  • ¼ teaspoon MasterFoods® Finely Chopped Chilli
  • 1-2 teaspoons of pear liquid or rum (optional)

Cooking Instructions


  1. Peel pears, leaving stalks on.
  2. Place sugar, water, sherry ,orange peel and MasterFoods Cinnamon Sticks in large saucepan.  When sugar dissolves, add pears.
  3. Cover and cook over gently heat until tender.  This usually takes about 11/2 hours (the longer the pears are left to simmer, the nicer they are)
  4. Turn pears frequently while simmering.  When tender (glazed and transparent in appearance) remove pears and leave to cool
  5. Keep chilled.  The pears should keep for one week
  6. When serving add brandy and liqueur to pear liquid then coat with chocolate sauce

Chilli Chocolate Sauce

  1. Place Chocolate in saucepan with water and  MasterFoods Finely Chopped Chilli.
  2. Stir over low heat until chocolate has melted and sauce is smooth
  3. Remove from heat and add pear liquid or Rum
  4. Leave to cool
  5. This sauce may be used as a topping on your favourite sweet and is also delicious mixed with milk as a chocolate drink.
